Roasted Pork Loin | Risotto | Grilled Asparagus

I’m a real food enthusiast and I often get inspired to create special meals for my family. This process normally starts with looking at Food Network or surfing the web for off-the-wall recipes. This journey takes a creative turn once I raid the pantry and fridge to find only one of the ingredient needed for the recipes. This excites me as now it’s time get creative and make a masterpiece out of an eclectic group of ingredients. So, the decision was made to make my version of risotto, I often hear people talking about it and I’ve never had it myself. Risotto is a dish of rice and other ingredients cooked in stock. It’s very popular in Italian cuisine and now I will create my version. Roasted pork loin and grilled asparagus will round out the meal.

Ingredients

Brown Rice (1 cup)
Pork Loin (4 lbs)
Asparagus (12 spears)
Olive oil (3 tbs)
Chicken Bullion (1 cube)
Onions (diced)
Garlic (3 cloves)
Roma Tomatoes (1 diced)
Mushrooms (white button | sliced)
Red peppers (half | diced)
Cooking Wine (dry white)
Salt (to taste)
Pepper (to taste)
Grated Parmesan (1/4 cup)
Shredded Italian Cheese Blend (Mozzarella, parmesan, Asiago)
Parsley (dried – 3 dashes)

Meat

I marinated the meat for about 4 hours in Olive oil, salt, pepper, garlic power, onion powder, dried thyme and dried rosemary.Then I roasted the pork loin in the oven on 400 for 20 – 25 minutes.

Cooking Rice

Boil 2 1/4 cups water with 1 cube of chicken bullion. I then add rice and bring back to boil. I allow the rice to simmer rice until slightly tender with broth still remaining and then set a side. In a medium sauté pan – over medium heat, heat olive oil then add onions and red peppers, cook until they are tender. Add garlic and cook for 1 minute. Add rice and remaining stock to sauté pan and add cooking wine – cook time liquid starts to evaporate. Add the diced tomatoes and the cheeses – allow thickening. Time to serve!

Asparagus

I took fresh asparagus and chopped the bottoms off. Then I seasoned the asparagus with salt and pepper. Lastly, I grilled the asparagus in light olive oil – allow them to scorch a little. Serve. Garnish the dish with parsley.

I can normally tell if the dish is a hit by my wife taking the first bite and pausing – then shouting, “That man can cook”!To me, that’s all the validation I need for a job well done. I may be biased, but I truly believed the dish ranked up in the top ten of dishes I have created. The risotto was the true hero of the dish – rich, silky, cheesy goodness and easy on the palate.The peppers and the mushrooms add a tasty-earthiness. This would be one of the few dishes were the meat was out staged.To be honest I have no point of reference since this is my first time experiencing a risotto, but it was delicious. Even my young boys enjoyed it and they are some picky eaters.

  1. This looks good we did a a pork loin taco yesterday for dinner. I have never had asparagus but I have heard it’s good with bacon wrapped around it.

    A man that loves to cook for his family is a keeper to me. It’s awesome how he seems to enjoy the challenge of taking a recipe and recreating it with a little twist due to lack od imgredient or just because he thinks it will enhance the dish.
    I love Risotto so I definitely want to try this recipe out.
